This is a quick method for pickling some cucumbers to go with a lunch or dinner. Takes a few minutes to make and only 30 minutes for the cucumbers to absorb the flavors and you are ready to eat with your meal. Delicious!!
1 large cucumber, very thinly sliced
1/4 red onion, very thinly sliced
1 cup rice vinegar
3/4 cup sugar
Pinch Red Pepper flakes (optional)
1. Place cucumber and onion in a glass storage container or glass jar. Add red pepper flakes (optional).
2. Whisk vinegar and sugar together until sugar is dissolved.
3. Pour over the cucumber and onion.
4. Seal and refrigerate for 30 minutes before using.
