Cranberry relish is so much better when it is made from scratch. It is not just for Thanksgiving. It goes well on toast, biscuits, French toast, waffles, with Swedish Meatballs, turkey sandwiches, and so forth. It is a very versatile condiment.

Ingredients:
4 cups fresh cranberries
2 cups sugar
1 cup fresh orange juice
Zest from 1 orange
3 tablespoons fresh lemon juice
1 teaspoon cinnamon
Directions:
1. In a medium sized pot add all the ingredients and bring to a boil over medium heat. Keep an eye on the pot and stir occasionally. Once it comes to a boil and the cranberries start popping, use a potato masher and mash some of the cranberries. Turn the heat to low and simmer for 5 minutes.
2. Remove from heat and immediately pour into a dish and let it cool.
*NOTE: You can chop up some pecans or walnuts and add about 1/4 cup of the nuts. You can add orange segments and some sprigs of mint if you choose. This is a very versatile, tangy, sweet condiment.
