Tofu and Sweet Potato Stew (Vegan/Vegetarian)

I recently made a Sweet Potato Beef Stew that came out extraordinarily delicious.  Immediately after making this dish, I got to thinking about my Vegan and Vegetarian friends.  Thus, I decided to make the dish again for them.  I swapped out the beef with tofu and swapped out the beef bone broth with vegetable broth.

When using tofu, like beef, it needs to be cooked first.  I like to fry mine up in a couple of tablespoons of olive oil.  I use firmly packed tofu.  I pat it dry with some paper towels to get the excess water out (pressing firmly).  This may take two are three times.  I cut the tofu up into 1/4 to 1/2 inch cubes.  Heat up a frying pan with 2 tablespoons of olive oil over medium heat and brown the tofu on all sides.  Remove from pan and drain on paper towels.

Follow the recipe for the Sweet Potato Beef Stew for everything else (do not forget to swap out the broth).  Add your tofu to the stew when you add the sweet potatoes.  (Follow this link for the recipe.)
