Homemade Dumpling Sauce Recipe with Yellow Rock Sugar

This simple dumpling sauce is a mix of savory, sweet and sour ingredients that works very well with basic homemade dumplings. The components of a good dumpling sauce are pretty simple, and it comes down to a balance of different flavors: salty, sweet, and a little bit of tang (sourness). Sometimes I like to twist things up a bit and will add some thinly chopped green onions and red pepper flakes to the sauce. Try the simple sauce recipe first and then start to mix things up to your tastes. Enjoy!!

Ingredients:
60 grams yellow rock sugar
150 milliliters soy sauce
300 milliliters black vinegar (I use the Chinkiang brand)
150 milliliters red vinegar

Directions:
1. Add soy sauce and sugar to a small sauce pan. Stir over low heat till the sugar is dissolved.
2. Add the vinegars. Do not let it come to a boil. Just let it heat through and mix the ingredients.
3. Pour into a bottle and keep in your pantry.

*NOTE: Dumpling sauce gets better with age as it mellows and develops. It can last for years by just adding to it. If you do not have an Asian grocery store in your area, you can find the ingredients online. I like to add minced garlic and minced ginger at times. Create the basic and then add the spices and flavors you enjoy.
