Perfect way to cook rice!!

I have always struggled to cook rice. I have tried many methods and each time my rice was too wet or too dry. I could have bought a rice cooker, but that was always easy way in my mind. Or, the need to get this right always prevented the purchase. Some may call me stubborn, I prefer the word ‘persistent’.
My persistence has paid off!! I finally came across a method that works every time, the Korean method of cooking rice. Perfect rice!! Success – and it doesn’t come in a box!!!
- You do not need to measure your rice, just pour some rice in a pot. Just ‘gestimate’ the amount you wish to cook up. Pour in some water, give the pot a good shake or two to rinse the rice, and pour the water out without losing your rice. Then, pour in some cold water. How much? Rest your index finger on top of the rice and the water line needs to be at the crease of your first knuckle of the finger.
- Let your rice soak for 30 minutes. If you are using brown rice, soak for 1 hour. I sometimes do a mix of 50% white and 50% brown (give or take) and let it soak for 30 minutes. Turn on the heat to medium high and bring to a boil. Let it boil for 5 minutes or until you see holes in the rice. Turn heat to low and cover. Let it cook for 12 minutes.
- Take your pot off the heat, keep it covered, and let it stand for 5 minutes. Fluff with a fork. Trust the method. Perfect rice every time!!
